Improved Tuna Salad Sandwich

Description: It sounds strange, but hummus combined with flaked tuna is delicious--it's also packed with tons of healthy fiber and protein! Can try chicken instead.

Ingredients:
- 2-3 Tbs hummus
- 2-3 spoonfuls tuna or chicken
- Wheat bread
*Other suggested toppings: cucumber, tomatoes, spinach, onion, shredded carrots

Directions:
Mix hummus and flaked tuna from salad bar. Mix in small bowl. Spread onto bread slice, put on choice of toppings. Put into mouth and enjoy!

Quintessential Quesadilla!

Description: No need to wait for quesadilla day at the stir-fry bar!  And it's a super-awesome way to utilize all the veggies at the salad bar and deli in HoCo.

Ingredients:
Deli Area:
- 1 Tortilla
- Tomato Slices
- Black Beans
Salad Bar:
- Monterey Jack Shredded Cheese
- Red/Green Bell Peppers
- Olives
- Onions
- Any other veggies you love!

Directions:
Add a layer of cheese on one half of tortilla (I like the tomato-basil ones).  Then layer on all the beans and veggies you like on that half.  Layer on some more cheese and fold empty half over.  Head over to sandwich cookers and grill for 1-2 minutes.  Slice into 4 wedges and enjoy!

Vegetable Hummus Melt

Description: Vegetables, Hummus, Melted Cheese loaded on a toasted bagel

Ingredients:
- One Bagel
- Hummus
- Vegetables: peppers, onions, tomatoes, carrots, or whatever you like
- 2 slices of cheese: your favorite kind

Directions:
1. Toast Bagel
2. At the sandwich/deli station, add two spoonfuls of hummus to each side of the bagel and smooth. 
3. Add tomato slice to each bagel half. Then add the remaining vegetables of your choice.
4.  Top vegetables and hummus with a slice of cheese.
5. Have the sandwich station worker put your creation through the oven to melt the cheese. 
6. Enjoy!

This can be done with Guacamole too! Use guacamole instead of hummus, add tomato slices, and cheese.***The guacamole is only behind the deli station on certain days when the daily sandwich has it.
